Grandma's Date Nut Cookie Balls


My grandmother made these "cookies" every year at Christmas. When she passed, my mother took over making them. These are terribly sweet and crispy and slightly chewy all at the same time, and they never last long on the cookie plate.

1/4 Cup butter
1/2 Cup sugar
1 Cup chopped nuts
1 Cup chopped dates
2 Cup crisp rice
1 tsp vanilla
1 egg
Coconut

In a double boiler, cook sugar, egg, dates, and butter until thick.
Remove from heat, add vanilla, crisp rice, nuts, and dates.
Mix together and let cool for 3 minutes.
Make slightly smaller than golf ball size drops, and roll in coconut. You want them to be essentially a single-bite (or a two small bite) cookie.

Grandma would color the coconut with different food colors and roll the balls in one or more of the colors.
